Brussels Sprouts Subzi

This is a quick side dish for a curry that uses the much maligned brussels sprout, I actually rather like them, I think the trick is not to boil them to death!

Serves 1 as a side

Ingredients

1 teaspoon of rapeseed oil
1 inch chunk of ginger, finely chopped
1 clove of garlic, finely chopped
1 red chilli, sliced into rings
100g brussels sprouts, trimmed and halved lengthways
Pinch of salt

Method

  1. Cook the sprouts in boiling salted water for 3 minutes, then drain.
  2. Heat the oil in a pan then stir-fry the chilli, garlic and ginger for 1 minute.
  3. Add the sprouts and cook for 4-5 minutes until lightly browned.
