Lentil & Sausage Stew

A nice hearty lentil stew with added vegi sausages. Use whatever sausages you fancy, I’m writing this couple of months after I made it so can’t remember what they were, probably Quorn. The only problem I had with this was that some portions came out more “sausage heavy” than others. Great with a bit of crusty bread.

Makes 4 portions


15 sprays of frylight olive oil spray
1 large white onion, chopped
2 sticks of celery, chopped
2 carrots, peeled and sliced
5 cloves garlic, finely chopped
2 red chillis, chopped
1 teaspoon of curry powder
1/2 teaspoon of chilli powder
1/2 teaspoon of ground coriander
250g puy lentils or brown lentils
2 bay leaves
Salt and freshly ground black pepper
3 vegi sausages, cut into 1-inch pieces
400g tin chopped tomatoes


  1. Heat the oil in a pan and saute the onions, carrots and celery for 10 minutes
  2. Add the garlic and chillis and cook for 2 minutes
  3. Add the curry powder, chilli powder and ground coriander and cook for 1 minute, stirring constantly
  4. Add lentils 900ml of water, bay leaves, salt and pepper, bring to the boil the reduce heat and simmer covered for 30 minutes
  5. Add the sausage chunks and cook for 5 minutes
  6. Add the tomatoes and cook uncovered on low heat for 10 minutes
  7. Add 100ml of water and cook uncovered for another 20 minutes adding more water as needed to obtain the desired consistency
