Cabbage Thoran

I came up with this as a low calorie, low carb, low fat side dish for a curry as I’ve got some serious making up to do after a rather indulgent Christmas. A thoran usually includes coconut but I’m not that keen on coconut in curries so I left it out and instead of serving with rice I used it as a side dish with a curry. It worked really well and I’ll definitely be making this again.

Makes 4 large servings as a side dish.


1/2 white cabbage (approx 500g), chopped
1 onion, chopped
4 green chillies, finely chopped
2cm ginger, finely chopped
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/4 teaspoon of salt
1/2 teaspoon mustard seeds
Frylight sunflower oil spray


1. Mix the cabbage, chillies, ginger, turmeric, cumin and the salt in a bowl.
2. Heat 15 sprays of the Frylight oil in a pan with the mustard seeds then add the chopped onion and saute until it is soft and transclucent.
3. Add the cabbage mix and cook for 10-15 minutes or until the cabbage is cooked al dente, adding a splash or two of water if required.
