Brown Lentil Soup
I love lentils and they make a wonderful soup, this one is so simple yet very satisfying. I would imagine most types of lentil would work in this sort of soup but I used whole brown lentils this time.
Makes 5 servings
190g whole brown lentils, rinsed well
1 onion, chopped
1 carrot, chopped
2 sticks of celery, chopped
3 cloves of garlic, finely chopped
2 red chillis, finely chopped
1.3 litres vegetable stock
1 tablespoon tomato puree
1 teaspoon cumin powder
Freshly ground black pepper
15 Sprays of frylight sunflower oil spray
1. Spray the cold pan with Frylight olive oil spray (15 sprays should do it), heat the pan to a medium heat and saute the onions, celery and carrot for 5 minutes or until the onions are softened.
2. Add the garlic and chillies and cook for another 2 minutes.
3. Add the stock, lentils, tomato puree and cumin, and a little salt and pepper, bring to the boil then reduce heat and simmer covered for 45 minutes or until lentils are tender.
