Asparagus and Mozzarella on Toast
Asparagus is in season at the moment and all the pictures of it cropping up on various websites set me off with a craving for it. I remembered a picture I had seen some time ago of asparagus with melted cheese which had appealed to me and toast seemed like the natural accompaniment, a quick search lead to this which I adapted slightly for lunch today.
Asparagus, trimmed and cleaned
A few slices of bread, a bloomer is ideal
1 clove of garlic
A squeeze of lemon juice
1. Lightly blanch the asparagus in boiling water for 2 minutes, drain and rinse well under cold water and drain.
2. Toast the bread on one side, drizzle the other side with olive oil and toast it too.
3. Rub the olive oil side with the clove of garlic.
4. Top with the asparagus tips, a tiny squeeze of lemon and the grated mozzarella and put under the grill until melted.
