Hot Chilli Mustard
I got this recipe from the great ChileFoundry website which is must read for all chilli heads. It’s surprising (well it was to me) how easy it is to make a nice hot mustard. Now I know how easy it is I will experiment with some variations, I particularly want to try one with the addition of some horseradish. Here is the original post on the ChileFoundry website.
50g White Mustard Seeds
100ml Japanese Rice Vinegar (I used a Mitsukan branded product)
2 tbs Olive Oil
2 tsp English Mustard Powder (I used Colmans)
1-2 tsp Chilli Powder (I used Naga Jolokia Powder)
1. Soak the mustard seeds in the rice vinegar in the fridge overnight.
2. Put all the ingredients together and blend until most of the mustard seeds are broken.
