Chilli Falafel Burgers

This is an incredibly quick and easy way to make delicious spicy falafel burgers, just whiz the ingredients together, shape into burgers of desired size and chill for 10-20 minutes before frying. Great served on an oven bottom muffin with some lettuce, hummus, chilli sauce and topped with grilled halloumi cheese.

From the list of ingredients it might look like it will be too dry but once blended it forms the perfect consistency to form into patties and chilling them first allows them to bond together nicely so they don’t fall apart when fried.

Ingredients

400g tin of chickpeas, rinse and drain well
2 garlic cloves, crushed
1 green chilli, chopped
1 spring onion, chopped
1 teaspoon extra hot chilli powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon of plain flour
1 tablespoon of olive oil
Olive oil for frying

Method

1. Put everything in a food processor and blend until chick peas are broken down and the mixture is quite smooth
2. Form into patties and chill for 10-20 minutes
3. Fry in a little olive oil until crisp, around 5 minutes per side
4. Serve in a bun or muffin with grilled halloumi, hummus, lettuce and chilli sauce
