Quick Vegetable Vindaloo

I don’t normally use pre-made sauces for my curries but this is a very quick way to make a vegi vindaloo using the Sharwoods Goan Vindaloo Sauce.


1 potato, peeled and cut into bite-sized chunks
175g cauliflower (medium size), cut into small florets
Broccoli florets
2 carrots
Green beans
Handful of peas
2 green chillis
1 jar Sharwoods Goan Vindaloo Sauce
Salt and black pepper


1. Boil the potatoes, carrots, broccoli and cauliflower for 8 minutes and add the green beans and peas after 4 mins.
2. Pour the vindaloo sauce into a large pan, add the chopped chilli and heat gently.
3. Drain the other ingredients and add to the sauce.  Bring to the boil, reduce the heat and simmer for another 10 minutes, stirring frequently. Season if required.
4. Serve the curry with naan, chapatti, rice etc.
