Halloumi and sweet potato veggie burgers

A nice home made veggie burger recipe, I like the addition of the halloumi cheese. From an original recipe by Hannah Nicklin with the addition of curry powder and chillis (of course!).

Ingredients:

2 large or 4 smaller sweet potatoes
2 cloves garlic, chopped
2 chillis, chopped
½ a small bunch spring onions
1 large handful fresh coriander, chopped
1 tsp ground coriander
2 tsp ground cumin
1 tsp curry powder
1/2 tbsp lemon juice
2 tbsp plain flour
1 tsp salt
1 pack halloumi cheese, diced
Olive oil

Method:

Roast the sweet potatoes on hot (~200C) for an hour, let them cool then peel and mash
Mix in the rest of the ingredients except the cheese
Add flour until the consistency is right to keep it together when formed into a pattie
Add the diced halloumi
Shape into patties and fry in olive oil
